* | 12-inch thin-crust prebaked Italian pizza crust, such as Boboli(R) |
* | 1 teaspoon olive oil |
* | 3/4 cup shredded mozzarella cheese |
* | 6 slices bacon |
* | 2 cups shredded iceberg lettuce |
* | 2 1/2 tablespoons mayonnaise, or to taste |
* | Kosher salt and freshly ground black pepper |
* | 2 ripe tomatoes, cored, seeded and coarsely chopped |
1 | Preheat oven to 425F degrees. Place a non-stick pizza baking pan in the oven while it comes up to temperature. |
2 | Place pizza crust on preheated pan. Brush top with olive oil. Spread the shredded mozzarella cheese evenly over the crust. Bake for 8-10 minutes or until cheese has melted. Remove from oven. |
3 | Separately, cook bacon in a heavy skillet until crisp. Transfer to paper towels to drain. When cooled, crumble bacon into pieces. |
4 | Toss shredded lettuce with mayonnaise and season with salt and pepper. |
5 | Spread the dressed lettuce over the top of the cheese. Top with chopped tomatoes and crumbled bacon. Slice into wedges and serve immediately. |
