Breakfast Pizza
Makes 4 ServingsIngredients
* | 8 ounces pork sausage (or any preferred sausage, bacon or pancetta) |
* | 12-inch thin-crust prebaked Italian pizza crust, such as Boboli(R) |
* | 1 1/2 cups frozen shredded hash browns, thawed and patted dry |
* | 1 cup shredded Cheddar cheese |
* | 1 medium tomato, cored, seeded and chopped |
* | 4 scallions, white and light green parts, chopped |
* | 4 large eggs |
Instructions
1 | Preheat oven to 400F degrees. Place non-stick pizza pan in the oven while it comes up to temperature. |
2 | Cook sausage in non-stick skillet until browned and cooked through, breaking up into pieces while it cooks. Drain off any fat. |
3 | Place pizza crust on the preheated pizza pan. Scatter the hash browns across the crust. Top with cheddar cheese. Bake for 15 minutes until cheese is melted. |
4 | Increase oven temperature to 450F degrees. Scatter the cooked sausage, chopped tomato and scallions over the pizza. Crack the eggs onto the pizza, one egg on each quarter. Return to oven for an additional 10-12 minutes or until the egg is set and cooked. |
5 | Cut into wedges to serve. |
Notes
If the sausage comes in a casing, remove the casing before placing sausage in the skillet for cooking.
