Corn Muffins
with Cheddar & Scallions
Makes 6 MuffinsIngredients
* | 8-ounce package corn muffin mix |
* | 1/2 cup milk |
* | 1 large egg |
* | 1 cup grated extra-sharp cheddar cheese |
* | 3 scallions, chopped |
Instructions
1 | Preheat oven to 400F degrees. Grease muffin tin or line with paper baking cups. |
2 | To prepare batter, combine corn muffin mix, milk, egg, cheese and scallions in a large mixing bowl. Stir to combine until moistened. Batter will be lumpy. |
3 | Spoon batter into muffin pan. |
4 | Bake muffins until lightly browned and tester inserted into center comes out clean, about 20 minutes. Transfer to a baking rack to cool. |
